As a kid, I had two favorite treats.

The first, a mint chocolate blizzard from Dairy Queen. The Queen of Dairy was the place to be after little league baseball games. All the eight year-olds in town swarmed the counter in great anticipation of their cold treats on a hot summer night.

I remember a gentleman who worked at DQ who would always hand us our blizzards upside down. I remember looking at him in great amazement thinking, “Whooooooa. How did he do that?”  I still think if I went back to that same Dairy Queen and ordered a mint chocolate blizzard, I would still be amazed. What can I say, I am easily amused.

My next favorite treat was a doughnut from Lamar’s. And not just any doughnut, a Long John with chocolate glaze. You know, the loooong doughnut. Ahhhh….yeahhhh. After church on Sundays there would always be doughnuts in the gathering space for people to nibble on. Riddle me this – Why are doughnuts and coffee always served at police stations and churches? Hmmm.
Anyways, Lamar’s would always serve the traditional glazed doughnut. Boring. But every once and a while, they would slip in a Long John and send me into sugar heaven. I remember licking the chocolate glaze off my fingers and running around like a maniac from the sugar high. Ah, those were the days.
Okay, you’re probably wondering why the heck I telling you about my favorite childhood treats. Well…today we’re doing a mash up. If you watch Glee it’s like a song mash up, but without the song. I was craving both of these treats last week, and since Denver has neither a Dairy Queen nor a Lamar’s, I decided to take matters into my own hands.

I stared at my newly purchased doughnut pan thinking how am I going to get ice cream on top of these doughnuts? Maybe I could make a doughnut mint shake? No, that’s not it. What about a doughnut mint sundae? Meh. I KNOW! Take the flavor of a mint chocolate blizzard and put into a glaze! {insert: toot of horn!}
You have no idea how ecstatic I was when the light bulb finally went on in my head. It was comparable to the aligning of the stars. Alpha and Omega were rejoicing from the mountain top. As soon as the idea entered my head, I went straight to the baking press.

I whipped up the batter, baked the doughnuts (let them cool), and dunked them into the chocolate peppermint glaze.
Lord.have.mercy.
The doughnuts were soft, moist and full of chocolate peppermint perfection. Who knew a simple idea could bring such joy?

Chocolate Peppermint Glazed Doughnuts

Makes 12 Doughnuts

Prep Time: 15 minutes
Cook Time: 8 minutes

Ingredients:
for the doughnuts:
2 cups cake flour, sifted
3/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1 teaspoon kosher salt
3/4 cup buttermilk
2 eggs
2 tablespoons butter, melted
for the chocolate peppermint glaze:
1/4 cup semisweet chocolate chips
1 tablespoon butter
1 tablespoon corn syrup
1 teaspoon hot water
1/2 teaspoon peppermint extract

Directions:
for the doughnuts:
Preheat oven to 425 degrees. Spray doughnut pan with nonstick cooking spray. In large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs and butter. Beat until just combined. Fill each doughnut cup approximately 2/3 full.

Bake 7 to 9 minutes or until the top of the doughnuts spring back when touched. Let cool in pan for 4 to 5 minutes before removing. Finish doughnuts with chocolate peppermint glaze.

for the chocolate peppermint glaze:
In a saucepan, add chocolate chips, butter, peppermint extract, and corn syrup. Turn saucepan to medium heat, and stir frequently until all ingredients are incorporated. Add hot water and stir until glaze is smooth. Add more hot water if glaze is too thick. Glaze doughnuts immediately.
