Is this how life is supposed to be? Or only when you become a part of adult life that everything is permanently on fast forward? If that’s the case, then I need to get my ass back to Southern France ASAP. Two years ago, Mr. B and I ventured to Biarritz, France for a much needed vacation. This was my first international trip since I was in collage and at the time of our arrival all I could think about was eating French food, marinating on the beach, soaking in the Basque culture while hanging with family.

I had no idea (you may slap me at any point in this sentence) that Bordeaux was a hop, skip, and jump away from Biarritz. Right now I am going to blame it on jet lag and being a novice traveler, but really there is no excuse for not at least doing a drive by of this beautiful region. Also, did you hear about the new wine museum that just opened up? Sighhhhhh.

Well, if I can’t get back to Bordeaux for a bit, I’ll have to bring the bold wine flavors to my table. With strawberries and every kind of berry bursting right now, I figured I needed to soak these babies in a wine tubby-tub. Booze soaked berries equal an easy, but fancy dessert. Toss a few on some fluffy angel food cake with whipped goat cheese. Have mercy. Goat Cheese Mousse Cakes with Bordeaux Soaked Strawberries

Ingredients:

1 pint strawberries, tops removed, sliced-in-half
2 1/2 cups Bordeaux or any red wine
1 4oz log plain goat cheese
2 tablespoons whipping cream
4 slices angel food cake
Vanilla ice cream
Fresh mint, garnish

Directions:

Pour wine into a gallon-sized Ziploc bag. Add the strawberries and place into the fridge for at least an hour or overnight. Meanwhile, place room temperature goat cheese into a mixer with a whisk attachment. On low, begin to whisk the goat cheese slowly streaming in the whipping cream. Add more cream if needed until the goat cheese is light and fluffy.
To serve, place a slice of angel food cake on a plate. Top with a dollop of the goat cheese followed by strawberries and some of the wine, and garnish with fresh mint or ice cream!
