We are ONE MONTH away from Modern Comfort Cooking hitting bookshelves. Can you believe it?! GAH! I am so flipping excited (and a little nervous) for it to be released into the world. This cookbook was definitely a labor of love, but after holding it in my hands, I know you guys are going to fall in the love with it too.
With that, I thought it would be fun to share a recipe from the cookbook. You may recognize this One-Pot Greek Biscuits & Gravy Cobbler because this gem is on the front cover. Isn’t it gorgeous? Well, I am happy to report that it’s equally delicious too. This dish hails from the brunch section in the cookbook and has been in our regular Saturday morning noshing rotation.
Picture lamb sausage gravy, fluffy biscuits and all the usual Greek toppings like olives, tomatoes and feta. Baked until golden brown and bubbling. Seriously, you guys are going to flip over this dish. Or maybe just shout OPA from the rooftop!
Besides all the flavorful ingredients what I love about this dish is that it’s cooked in one pan. Specifically this Staub Double Handle Fry Pan. This pan is great for searing, browning, roasting, frying and baking. Perfect enameled cast-iron cookware that cooks evenly and you can even clean it in the dishwasher!

One-Pot Greek Biscuits & Gravy Cobbler
Ingredients:
1/4 cup (36 g) all-purpose flour
2 tsp (5 g) ground oregano, divided
1 tsp garlic powder
1 tsp cumin
1/4 tsp kosher salt
1/4 tsp ground pepper
3 cups (700 ml) whole milk
3 tbsp (42 g) unsalted butter, melted
one 16oz can (0.45 kg) prepared biscuits
Grape tomatoes, for garnish
Kalamata olives, garnish
Crumbled feta, garnish
Fresh mint, garnish
Directions:
Preheat the oven to 350°F (177°C). In a large 10-inch (25 cm) cast iron skillet preheated to medium heat add the olive oil and sausage. Cook the sausage breaking it up with a wooden spoon until no longer pink; about five minutes. Once cooked, strain the sausage removing any excess fat from the skillet. Add the cooked sausage back to the skillet. Next, add the flour, 1 1/2 tsp (4 g) oregano, garlic powder, cumin, salt, and pepper to the sausage. Stir to combine making sure everything is well combined. Pour the milk into the skillet and continue to stir until the gravy has thickened; about five minutes. Remove the skillet from heat and top the gravy with biscuits. Mix the melted butter with 1/2 tsp oregano. Brush the tops of the biscuits with the oregano butter and place the skillet into the oven for about 10 to 15 minutes or until the biscuits are cooked through. Remove the skillet from the oven and garnish with grape tomatoes, kalamata olives, feta, and mint.
I adore a big pot of chili on a cold, winter Sunday. There’s nothing more comforting – and only dirtying one pot is a bonus. Can’t wait to get my hands on your cookbook.

I absolutely love my loaded baked potato soup recipe, and if I am feeling really fancy, I love to bake some homemade pretzel bread bowls with them, but there goes the whole one pot idea…. I’d say it is an entirely lovely exception if I have the time!

Oh my gosh, biscuits and gravy are one of my favorite indulgences, and I love greek flavors! I think I actually have some lamb sausage in the freezer! Can’t wait to try this–maybe this weekend!
My favorite one pot meal would have to be a soup. No particular recipe…it’s kind of a clean-out-the-fridge meal, but always ends up being tasty and comforting, especially topped with some parmesan cheese and served with a hunk of crusty bread 🙂

My favorite one pot dish is home fries. We usually start by cooking some bacon, remove it from the pan, cook the potatoes in the bacon grease, and then add the bacon back in. In addition to the bacon, you can flavor and season it an endless number of ways, making it versatile for any occasion.

This recipe looks delicious! We’ll have to try it for one of our weekend breakfast rotations. My favorite one-pot meal is jambalaya. It’s been a go-to of mine for years. I often have most of the ingredients around the house anyway for those times when we just haven’t made it to the grocery store lately. If we don’t have everything, it’s a pretty easy dish to improvise. Plus, the leftovers are awesome and taste even better when everything has had time to marinate together.

We make a casserole in our dutch oven with lots of veggies and cream of mushroom soup that we top with dough and then bake and it’s always a huge hit!
