Now that we have officially entered the “spring zone”, the Internet is going to be pulling up fresh vegetables and produce like a rabbit out of a magician’s hat. Don’t get me wrong, I am all for rabbit food. A girl has to keep her figure, yo.
But there are some days when I would rather pound dirt then eat a piece of lettuce. Or eat one more kale chip, or chomp on a broccoli floret. And all I really want is a slice of gooey, cheesy pizza or a big o’l juicy burger. So what’s a girl to do?
Enter this spicy coconut carrot soup with fried shallots.
I realize that when I mentioned the words “rabbit” and “food” together, you might have been thinking: “Lauren, you’re off your rocker! This soup is totally made of rabbit food!” I would completely agree with you. But what if I told you that even a die-hard carnivore could get behind?”
What I love about this soup is the thai take on it with the coconut and fresh ginger. In addition to the red pepper flakes to spice things up, I added some fried shallots on top! Can I get a what-what?! So, if you ask me, is this really rabbit food? Technically, yes, because it has a whole ‘pounder’ of carrots blended up in the soup.
But I think the question you should be asking, “does it taste like rabbit food?”
The answer? You’ll have to make it to find out.

I’ve never thought of carrots in a spiced/coconut way, but this is definitely a keeper!
I’m always a fan of soups versus dainty salads when it comes to healthy eating, they’re so much more filling! This soup looks completely luxurious, and perfect for a brisk spring day!
Don’t get me wrong, I love a good steak, which is the very reason I’m not a vegetarian, but I love me some rabbit food, too. This soup looks amazing.

Just made this (minus the shallots), as in its still on the stove. Very good! I like it a lot and look forward to trying it again tomorrow after flavors have melded. I’m by no means a cook so a few observations from a novice (just in case there are any others out there.)
1) You can grate ginger with the tines of a fork if you don’t have a grater; google it. 2) Even thou I chopped carrots into small coins, it took longer than a 5 min sautée to get them softish – no big deal, I expected that. 3) This was my first time working with coconut milk. Store only had ‘classic,’ not light. Do notice the can says to ‘shake well before opening.’ I did not. Wasn’t expecting it to be as creamy and come out in a soft can-shaped lump. Don’t freak, its supposed to – especially if you don’t shake can first. And go ahead and take top of can off, don’t just make holes like you’d do to pineapple juice or Hi-C. 4) I think I used more than enough carrots/apples/onions, but it wasn’t thick like I was expecting it to be. Is it supposed to be thick? 5) Use full amount of ginger, red pepper flakes, etc. – you’ll be fine.

Amazing comfort food!
I love ginger and carrots together, it’s one of my favourite soups to make. I’ve never tried putting coconut milk in there, but I can imagine the sweetness of the coconut would play off the sweetness of the carrots well!
