Do you ever wonder how you get anything done? I know I do.  But maybe I should consider it a blessing in disguise:  who would really want to sit on the couch all day Al Bundy-style?

My day is generally broken up into three sections. First part is all about functioning, whether it’s going to the grocery store, picking up the dry cleaning, wiping off kitchen counter tops, or shopping at World Market. If this stuff didn’t get done, there would be no second or third. Second part of my day, I spend at my full job time dabbling into the world of finances. Third part of my day is spent blogging, social media-ing, and writing/rewriting posts.

Even though what I do day in and day out isn’t rocket science, I’m still exhausted when the sun does down. So, when it comes to entertaining or simply cooking for the mister and I, I try to think of fun ways to jazz up the standard ol’ dishes without spending countless hours in the kitchen.

That’s how these shrimp scampi appetizers were born. I practically started dancing gangnam style when I thought of taking a classic pasta dish and turning it into a bite size portions. Can I just state for the record that wonton wrappers are the best thing since jeggings? Wonton wrappers are like a blank foodie canvas because you can fill those darn things up with any ingredient your heart desires.

In case you’re wondering, there’s no pasta in this dish. But the usual suspects are still there – shrimp, garlic, parsley, and cheese!

So, pour yourself a glass of white vino, bake these little shrimp scampi truckers, and put some minutes back on the clock.

Shrimp Scampi Wonton Bites

Ingredients:

12 shrimp, peeled and de-veined
2 garlic cloves, chopped
2 tablespoons butter
1 shallot, minced
1/3 cup white wine
2 tablespoons parsley, chopped (+ more for garnish)
1/4 teaspoon red pepper flakes
2 teaspoons lemon juice
12 wonton wrappers
1 cup Parmesan cheese, grated (+ more for garnish)
