foodie fridays: shrimp scampi wonton bites
Do you ever wonder how you get anything done? I know I do. But maybe I should consider it a blessing in disguise: who would really want to sit on the couch all day Al Bundy-style?
My day is generally broken up into three sections. First part is all about functioning, whether it’s going to the grocery store, picking up the dry cleaning, wiping off kitchen counter tops, or shopping at World Market. If this stuff didn’t get done, there would be no second or third. Second part of my day, I spend at my full job time dabbling into the world of finances. Third part of my day is spent blogging, social media-ing, and writing/rewriting posts.
Even though what I do day in and day out isn’t rocket science, I’m still exhausted when the sun does down. So, when it comes to entertaining or simply cooking for the mister and I, I try to think of fun ways to jazz up the standard ol’ dishes without spending countless hours in the kitchen.
That’s how these shrimp scampi appetizers were born. I practically started dancing gangnam style when I thought of taking a classic pasta dish and turning it into a bite size portions. Can I just state for the record that wonton wrappers are the best thing since jeggings? Wonton wrappers are like a blank foodie canvas because you can fill those darn things up with any ingredient your heart desires.
In case you’re wondering, there’s no pasta in this dish. But the usual suspects are still there – shrimp, garlic, parsley, and cheese!
So, pour yourself a glass of white vino, bake these little shrimp scampi truckers, and put some minutes back on the clock.

12 wonton wrappers

Al Bundy-style. I love it! Simple meals are the best. I love this!
Agreed! Thanks, Cassie! Happy weekend!
I swear you are the queen of appetizers! I need some serious appy lessons from you! Your day sounds intriguing to me! What do you do for your day job?? I got my degree in Finance and am not doing too much with it but am definitely a numbers person. We need to do some brain picking, you and me…over some shrimp scampi wontons!
Thanks, doll! I just love quick, fast, and easy. Plus, it’s super fun to put spins on dishes. Love it. I work in investments/financial planning. Nothing to crazy. When the market fell a part back in 09, life was a little crazy. I was lucky to find a small private business to keep my financial skills tuned. And yes, let’s definitely chit-chat over these bites!
I can sit down with a plate of these! They look delicious – and so creative. Yum!!
Thanks, Aggie! I’ll save you some 🙂
And ya know, some days I want to be “al bundy” & sit around all day, funny how I just can not let myself do just that 😉
Me too! I wish I wasn’t such a busy body all the time!
These are great and I LOVE that you made this into bite size pieces. Now I just need some to cram into my mouth.
Thanks, Meagan! I’ll bring some over in 5!
I love appetizers, especially easy ones! After a day of working if I have someone coming over I need something quick to throw together. These look delicious and I could really use a glass of white vino (and yes it is still morning). Happy Friday!
Ha! I could use a glass of vino right now too. Cheers, friend!
These sound so good – love the bright lemon and chili flakes!
I think red pepper flakes should be used more often! It really kicks a dish up a notch! Happy weekend, Liz!
These sound so good!! The chili flakes are so pretty all over that shrimp! I want to make this for dinner tonight!
Thanks, Tieghan! It’s so nice to find a fellow Coloradan food blogger! Happy weekend!
