T-minus one week until Christmas Eve.

Um, is it wrong to request an additional week to get my act together? I still need to finalize a bunch of Christmas gifts, get our travel gear together (we will be doing the full Kansas tour again) and a few last minute recipes. Anyone else feel like they are in a rush? 

Even though everything feels like a giant fire drill at the moment, I am super excited to be home for the holidays. I can’t wait to devour my mom’s sugar cookies and partake in our annual elephant gift exchange. But! One of my favorite traditions has always been eating pizza for Christmas Eve dinner.

I think this tradition came about so my parents could keep their sanity. Trying to keep my brothers and I in one piece during mass with the anticipation of Santa Claus on the horizon. The only thing that would keep us in line would be the promise of a slice of cheesy pizza on the other end. 

Anyway, I was thinking this year instead of requesting a delivery dude to bring us a pie, I had a brilliant idea of making pizza in slow cooker while we are at mass. Did you know that you can make pizza in a slow cooker? I KNOW! I almost didn’t believe it myself.

All you have to do is spread the dough into the bottom of the slow cooker. Add your toppings and allow it to cook for a few hours. THAT’S IT! I honestly don’t know how I’ve been on this planet for so long and didn’t know this was an option. 

To say that I’m excited to make this Slow Cooker Meat Lovers Pizza for Christmas Eve might be an understatement. Might need to leave Santa a slice or two.

Slow Cooker Meat Lovers Pizza

Yield: Serves 4

Prep Time: 10 minutes

Cook Time: 3 hours

Ingredients:

1 pkg pizza dough either store bought or homemade

  • 1/3 cup pizza sauce
  • 10 slices pepperoni
  • 1/2 lb cooked ground sausage
  • 1 1/2 cups shredded white cheddar cheese
  • Fresh basil, for garnish

Directions:

  1. Spray a slow cooker with non-stick cooking spray. In the slow cooker (I use a 5quart size), take the pizza dough and spread it evenly on the bottom. It’s okay if some of the dough goes up the sides. Next, take the pizza sauce and cover the dough leaving a half-inch border.
  2. Top with pepperoni, sausage and cheese. Cook on low for about 3 to 4 hours. When ready to serve slice and top with fresh basil.
