To Plant, or Not to Plant: That is the question.
Being a Coloradoan, it’s hard to answer that question. Because every year we get giddy and swoon over the fresh flowers at the garden center, but we know. Oh, yes, we know. That come Mother’s Day weekend it will snow.
And not just a dusting.
More like a giant blanket of snow that covers our grass, streets and potential gardens. Frustrated would be an understatement to describe our short growing season. We truly only have five months to grow, eat and put away. Sigh.
So, I’m putting my foot down and starting the growing season celebration right now with today’s recipe. I realize that tomatoes aren’t going to be perky until August and that’s okay. This Greek Bruschetta Pasta Salad has a few extra ingredients that will take your tomatoes to another level.
Can I get a high-five for pasta salads? We live on pasta salads during the warmer months in our households. You just toss whatever ingredients you have on hand in a bowl and BOOM. Simple side ready to go. BUT! I highly recommend giving this Greek Bruschetta Pasta Salad a go. Fresh tomatoes, cucumber, garlic, feta, basil and red wine vinegar will have you saying OPA all summer long.
Just don’t forget to wear your puffy jacket while devouring a bowl. Kidding. Maybe.
Greek Bruschetta Pasta Salad
Ingredients:
- 1 lb orecchiette pasta (or your favorite kind of short pasta)
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 garlic clove, minced
- 1/2 tsp dried oregano
- 1/4 tsp Dijon mustard
- salt and pepper to taste
- 1 pint cherry tomatoes, halved
- Cucumber slices
- Red onion slices
- Feta crumbles
- 1/4 cup fresh chopped basil
Directions:
- Bring a large pot of water to a boil. Add the orecchiette and cook the pasta according to package directions. Drain and set aside in a large bowl.
- In a small bowl add olive oil, red wine vinegar, garlic, dried oregano, Dijon, salt and pepper. Whisk to combine.
- Add the tomatoes, cucumbers, red onion, and feta to the bowl with the pasta. Toss with the dressing and garnish with basil. Serve and enjoy!
