I’m so excited! 

Tonight I’m hosting a DIY Charcuterie Workshop for around 20 folks. In the past, I’ve done a bunch of cooking demos, but this workshop has me giddy as a schoolgirl. 

Making a charcuterie board is one of my favorite things to do in life. So being able to teach others how to build a beautiful masterpiece and step outside their creative comfort zone makes me truly happy. Plus, I’m sprinkling in some photograph tips on how to make it Instagram-worthy. It should be a fun and relaxing evening! 

Besides getting ready for the workshop, I am still in big-time nesting mode. I want to organize everything in my house. I’ve got a few things done, but I need to pick up the pace. I’m concerned that the further along I get in this pregnancy the less motivated I will become. 

I feel like I might have a giant reality check towards the end of July. I am super stubborn when it comes to slowing down. Am I crazy for feeling that way? Maybe I should just chill out and enjoy life now? Good news, we have decided to go on a babymoon to Maine during this time. Hopefully, this will be a good transition to actual reality!

Bacon Cheeseburger Stuffed Mushrooms

If you wan to mix up your standard patriotic fare this year these Bacon Cheeseburger Stuffed Mushrooms are a must. So simple to put together. Just stuff cheeseburger mixture into a mushroom cap, bake for a bit and add all your favorite fixings on top! You’ll never miss the bun and let’s be real small bites of food are way more to fun to consume!

Bacon Cheeseburger Stuffed Mushrooms

Ingredients:

  • 1 lb ground beef
  • 1 tbsp Worcestershire sauce
  • 1 tsp Tabasco
  • 1 tbsp yellow mustard
  • 2 garlic cloves, minced
  • salt and pepper to taste
  • 16 baby bella mushrooms, stems removed
  • 1 tbsp olive oil
  • 6 slices cheddar cheese, quartered
  • 6 pieces cooked bacon, cut into squares
  • Grape tomatoes, halved
  • Sliced pickles

Directions:

  1. Preheat your oven to 350 degrees. Spray a baking sheet with non-stick cooking spray.
  2. In a large mixing bowl combine ground beef, Worcestershire sauce, Tabasco, yellow mustard, garlic, salt and pepper. Form into small patties to fit inside the mushroom caps.
  3. Place the mushrooms on the baking sheet and drizzle the tops with olive oil. Next, take the burger patty and stuff them into the wells of the mushroom caps. Bake for about 20 minutes.
  4. Remove the baking sheet from the oven and place the cheddar slices on top of each burger. Place the baking sheet back in the oven for about five to 10 minutes or until the cheese has melted. Remove the baking sheet from the oven.
  5. Garnish each burger with bacon, grape tomato, and pickle! Enjoy!
