The other day I was really jonseing to make Christmas cookies. My mom makes the best sugar cookies. The recipe I have used in the past is this one.
Anyways, I remember as a kid standing in the kitchen with my mama and brothers rolling out the dough and waiting patiently for the cookies to bake then cool so we could decorate! I was a hooker for the Christmas tree cut out with green icing. Still am.
Even though I am a huge sugar cookie fan, a part of me also wanted to build a gingerbread house. These were so fun to make as a kid because you could literally build a house from scratch and paste 394 gumdrops on the roof along with candy canes and gingerbread dudes. OMG. It was the best.
Where am I going with this? My question for you on this Monday is: would you rather go to a sugar cookie decorating party or a gingerbread house party? I thought this would be an easy answer. But if you sit and think about it for a hot second both parties sounds like fun!
Personally I would probably end up going to the gingerbread house party. I’m not a baker so the whole dough situation is not my jam. Maybe Charlie will be into baking? If so, homegirl might want to make this Gingerbread Loaf with Caramel Cream Cheese Frosting.
Isn’t it gorgeous? Also, festive AF too. This loaf is really a comprise between cookies and houses. Just your basic loaf with a decadent frosting swirled on top. It’s an easy batter and would look great as a centerpiece during your holiday festivities.

Gingerbread Loaf with Caramel Cream Cheese Frosting
Ingredients:
- for the gingerbread loaf:
- 1 1/4 cups all-purpose flour
- 1 cup whole wheat flour
- 2 tsp ground ginger
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp ground cloves
- 3/4 cup molasses
- 3/4 cup boiling water
- 1/2 cup unsalted butter, room temperature
- 1/2 cup light brown sugar
- 1 large egg
- 1 tsp lemon zest
- caramel syrup, for garnish
- for the caramel cream cheese frosting:
- 1/2 cup unsalted butter, room temperature
- 8 oz plain cream cheese
- 4 cups confectioners sugar
- 2 tsp vanilla extract
Directions:
- for the gingerbread loaf:
- Preheat an oven to 325 degrees. Spray a 9X5 loaf pan with non-stick cooking spray. In a large bowl, combine all-purpose flour, whole wheat flour, ground ginger, baking soda, cinnamon, salt, pepper, and ground cloves.
- In another large bowl combine the molasses and boiling water.
- In a mixer fitted with a paddle attachment, beat the butter and brown sugar until fluffy. Beat in egg and zest. While the mixer is running on low speed, add the flour mixture alternately with the molasses mixture.
- Once combined pour the batter into the prepared pan. Bake for about 50 to 55 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow the loaf to cool completely on a wire rack. Once cooled frost with caramel cream cheese frosting. Slice and enjoy!
- for the caramel cream cheese frosting:
- In a mixer fitted with a paddle attachment, beat butter and cream cheese. Add powdered sugar and vanilla extra. Continue to beat until creamy.
