I’m like half ready.
I’m definitely ready for longer days and warmer weather. BUT! The other half of me is not ready because Daylight Savings with a five month old baby can’t be good, right?
I’ve read a few articles on what to do with babies when dealing with time changes. Many of them say to start waking them up 10 minutes early every day so when Sunday comes they are already back on schedule. Does that really work?
Charlie is a good baby that adapts pretty well as long as we follow her schedule. I might go rouge and not change a single thing. GASP! But seriously, if you have any words of wisdom on this sleep matter TELL ME! Also, can we just get rid of Daylight Savings!!! K. Thanks.
Well, I guess to combat the hour of lost sleep, we will need some substance. I’ve made stuffed peppers in the past, but I’ve always stuffed them with meat and pasta. I don’t know why it took me so long to make them a breakfast thing.
All you need to do is whisk some eggs, add your desired fixings to the peppers, and bake. It’s basically a low maintenance version of an omelet made in a skillet. Only this version can feed a crowd quick, fast, and in a hurry. Or a hungry mama with a cranky tired baby!
Everything Omelet Peppers
Ingredients:
- 3 bell peppers, halved and seeds removed
- 8 large eggs, lightly whisked
- 1/4 cup whole milk
- 1 cup shredded cheddar cheese
- 1 tbsp everything bagel seasoning
- 2 tbsp chopped fresh parsley
- salt and pepper to taste
Directions:
- Preheat an oven to 400 degrees. Place peppers cut side up in a 9X13 baking dish. Add a little water to the dish and bake the peppers for about five to seven minutes.
- Meanwhile, whisk together the eggs and milk in a large bowl. Stir in the cheese, everything bagel seasoning, parsley, salt and pepper. Divide the egg mixture between the peppers. Careful not to over fill.
- Place back in the oven for about 35 to 40 minutes or until the eggs are set. Serve and enjoy!

1. Never ever any good reason to awaken a sleeping child. (Exception is a potential concussion.)
2. Unless you are blessed with an exceptionally docile child, actively changing a child’s schedule is begging more stress into your lives. You say you’ve been following her schedule and all is good. Why change a lifestyle that is working well?
3. Leave curtains open, and children will usually follow natural light/dark sleep cycle, and gradually adapt to time change without much effort on your part. Just don’t change your normal noisy lights on morning routine. [Our son was in NICU for 43 days after birth. He slept when sleepy, awoke when no longer tired, and was fed when he was hungry. All under bright fluorescent lights. After leaving womb, he never experienced darkness until first night at home. We then experienced the loudest most heart-rending hysterical screams ever.] Extra benefit: he could nap any where, amid light or noise.
4. Absolutely Always do whatever makes you and partner comfy. No one knows your child better than you. Smile, nod and ignore everyone, including me! My mantra is ‘ everything is good for someone, but nothing is good for everyone’.
