Why Make these Cottage Cheese Cracker Bites? 

When it comes to appetizers, it’s all about combining flavors and textures to create a memorable experience. I was recently inspired after attending the Fresh Air Retreat New Orleans thanks to two immersive sponsor activations: Sweet & Savory Taste Test with La Panzanella & raincoast crisps and a Del Duca charcuterie workshop. 

I love discovering new products to use when creating fun and delicious appetizers. Did you know that La Panzanella has eight different flavors to choose from and are made with only 5 ingredients? They are light, airy, and make a great base for any topping. Anyway, I decided to go with raincoast crisps as the base of this Cottage Cheese Cracker Bite. 

Raincoast crisps also has many unique flavors to select from and I thought the rosemary raisin pecan crisp would be the perfect foundation to top with creamy cottage cheese, thinly sliced Del Duca prosciutto and sprinkle of giardiniera.

Speaking of Del Duca, their collection of meats are delicious and can be found at many store locations. I loved using their prosciutto for these cracker bites, but if you ever want to explore more of their products I highly suggest using their salami to make a Salami Rose. It will definitely elevate your charcuterie board game!

How to Make Cottage Cheese Cracker Bites 

To create these Cottage Cheese Cracker Bites, gather the following ingredients: 

  • Whole milk cottage cheese
  • raincoast crisps (check out their website for more flavor options)
  • Del Duca prosciutto slices
  • Giardiniera, roughly chopped 
  • Fresh Basil  

Preparation: 

Start by placing a slice of the prosciutto over the rosemary raisin pecan crisp. Next, top the prosciutto with a spoonful of cottage cheese followed by a small amount of giardiniera for a burst of tangy flavor. Garnish with fresh chopped basil to add a touch of freshness. Repeat the process until you have a platter full of these delightful bites.
