Greek Feta Gnocchi Skillet

Gnocchi with feta is a creamy dish that’s surprisingly easy to make! It starts with butter melted in a cast-iron skillet with the gnocchi, and sauteed until golden brown.
Toss with whipped feta cream and the usual Greek suspects – olives, tomatoes, mint, cucumber, red onion, and more feta.
Afterwards, you may or may not let out a little, “OPA!” as you devour the greek gnocchi style dish.
Is Gnocchi Healthy?
The first question you might be asking is “What is gnocchi”? Gnocchi is a type of pasta made of flour, eggs, and mashed potatoes.
So, is gnocchi healthy?
It is high in carbs and calories, and low in protein and other nutrients, so you can put it right there with pasta as a delicious food that isn’t the most healthy thing to eat.
However, depending on the ingredients in the gnocchi you get or make, it can be healthy! Cauliflower gnocchi or sweet potato gnocchi are examples of healthier gnocchi options.
Ingredients You’ll Need
For the Greek gnocchi:
- 1 package store bought Gnocchi
- 3 tablespoons unsalted butter
- Grape tomatoes, halved
- Red onion, sliced thinly
- Cucumbers, diced
- Olives (any kind)
- Mint, garnish
- Feta crumbles, garnish
- Salt and pepper to taste
For the whipped feta:
- 1 cup feta crumbles
- 4 ounces plain cream cheese
- A splash of whipping cream
- Salt and pepper to taste
How to Make Feta Gnocchi
To make the feta cream, place the feta crumbles, cream cheese, whipping cream, and spices into a food processor. Pulse until smooth and silky. Set aside.
Cook your gnocchi according to package instructions. If you boil the gnocchi, be sure to drain it completely.
Preheat a skillet to medium heat and melt the butter. Add the gnocchi to the skillet and saute for a few minutes until golden brown.
Remove from heat and fold in the gnocchi feta cream, tossing gently.
If you have single-serving skillets, that’s a fun way to serve this dish! Or simply pour gnocchi into a large bowl and top with grape tomatoes, red onion, cucumber, olives, and mint.
