Well, today’s recipe is a go-to meal we make a lot in our household when the weather warms up. These Greek Grilled American Lamb Shoulder Chops are not to be missed. American Lamb Shoulder Chops are tossed with a Greek marinade of dill, oregano, mint, and lemon juice. The lamb shoulder chops are grilled on high heat and then served with a Greek spread. Have you ever tried lamb shoulder chops? The lamb shoulder chop requires significantly shorter cooking than other cuts of lamb. The easiest way to prepare these lamb shoulder chops is grilling them over high heat. Cooking lamb outdoors on the grill is simple, delicious and adds adventure to your backyard BBQ.
Once you’ve grilled the lamb shoulder chops to an internal temperature of 145 degrees Fahrenheit, you will need to let them rest for a minimum of 3 minutes to finish cooking. This simple step will allow the flavors to combine. From there you will thinly slice the chops and serve!

- Lamb Shoulder Chop. Make sure to bring your lamb to room temperature for at least 1 hour prior to grilling. This simple step will help bring out more flavors of the lamb and ensure even cooking.
- Lamb Rest. The most important part of cooking or grilling lamb is to cook it to 145 degrees Fahrenheit followed by a 3 minute rest.

Greek Grilled American Lamb Shoulder Chops
Ingredients
- 1/2 cup Olive oil
- 2 tbsp Fresh oregano, finely chopped
- 2 tbsp Fresh dill, finely chopped
- 2 tbsp Fresh mint, finely chopped
- 3 cloves Garlic, minced
- 1 large Lemon, juice + zested
- Pinch of red pepper flakes
- Kosher salt and pepper to taste
- 4 3/4-inch American lamb shoulder chops
Instructions
- In a mixing bowl combine the olive oil, oregano, dill, mint, garlic, lemon zest + juice, red pepper flakes, salt, and pepper.
- Take the marinade and pour into a large Ziploc bag. Add the lamb shoulder chops to the bag, seal, and then gently massage the marinade into the lamb. Place in the refrigerator for at least 1 hour or overnight for best results.
- Heat the grill to medium-high heat. While the grill heats bring your lamb shoulder chops to room temperature. Next, place the chops on the grill and cook for about 2 to 3 minutes per side. Once the chops have reached an internal temperature of 145 degrees Fahrenheit, you will need to let them rest for a minimum of 3 minutes to finish cooking. Slice, serve, and enjoy!
