It’s okay if you haven’t.

Apparently, it’s been around for awhile (like, hello six seasons!!) and yours truly has never heard a single peep about this fantastic AMC series. Maybe you are smarter than me and have heard about it? I’m talking about a little show called, Hell on Wheels.

The show is about the construction of the First Transcontinental Railroad across the US. It chronicles the laborers, surveys, mercenaries who were a part of this mobile encampment. The writing and acting is spot on because after the first few episodes, I was blown away by what these folks went threw to make the railroad system come to fruition. All I have to say is thank god for paved roads! Oh, and running water and general medicine.

I will full on admit that I would not last a day if I was sent back to 1865. Maybe if I had a DeLorean (Back to the Future style) as an escape option I could stay for a bit longer, but more than likely I would end up in a shootout for yapping my trap. Plus, everything seems just super dirty and dusty. Um, no thank you.

Now, that I’ve added another “must watch” show to your list, I can’t send you off without something to nibble on. Might I recommend a Dark Chocolate Pumpkin Pancake Skillet? You can eat this bad boy for breakfast, brunch, or better yet, brinner! The ingredients in this pancake are simple, but fall worthy. Hello, pumpkin and dark chocolate. These two were made for each other and as the official first day of fall approaches, I can’t wait to incorporate them into more delicious recipes.

Besides the fall flavors, another fantastic component of this pancake – it’s made in one skillet. There’s no need to stand and flip. Can I get a high-five?! Just pour the batter into the skillet, bake until golden brown, and drizzle with maple syrup. I don’t know how life could get much better?

Dark Chocolate Pumpkin Pancake Skillet

Ingredients:

1 cup all-purpose flour
3 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
3/4 cup whole milk
1 large egg
2 tablespoons unsalted butter (melted) + 1 tablespoon to melt in pan
3/4 cup regular dark chocolate chips
1/2 cup pumpkin puree
1/2 cup mini dark chocolate chips
Confectioners sugar, garnish
Maple syrup, garnish

Directions:

Preheat oven to 375 degrees.
Place a 10-inch cast iron skillet into the oven and let it preheat for about 5 minutes. Meanwhile, melt 3/4 cup dark chocolate chips in the microwave on high for 30 seconds. Stir. Microwave again for 30 seconds. Stir. Repeat until chocolate is melted and shiny. Set aside to cool.
In a large bowl, whisk together flour, granulated sugar, baking powder, salt, milk, egg, pumpkin puree, melted chocolate, and 2 tablespoons melted butter. Remove skillet from oven and add one tablespoon butter to the skillet allowing it to melt. Then add the batter and spread evenly with a spatula. Sprinkle mini chocolate chips on top. Bake in the oven for about 20 to 25 minutes or until golden brown. Cool slightly before slicing. Dust with confectioners sugar and maple syrup if desired.
