In the GRIER household, we are BIG fans of antipasto. 

A few favorites we make almost weekly – Antipasto Sliders, Layered Antipasto Cheese Bread and now this Easy Antipasto Breakfast Casserole. There’s something about cured meats, cheeses, and pickled vegetables that make us happy. 

The best part? We can now enjoy all those happy hour appetizer ingredients for breakfast or brunch. Besides the flavor of this casserole, I love how easy it is to put together. Simply layer all the ingredients, pour the egg mixture over, and bake. Fun way to jazz up the weekend or the holidays!

Antipasto is an Italian term that refers to a variety of appetizers or hors d’oeuvres, usually consisting of cured meats, cheeses, olives, and other pickled or marinated vegetables.

What is an Antipasto Breakfast Casserole 

A fun mash-up of Italian appetizers and classic egg casserole. This dish is made by layering salami, pepperoni, ham, pepperoncini, olives, cheese, and eggs into a casserole dish. Bake until golden brown and serve for breakfast, brunch, or dinner! 

Ingredients to Antipasto Breakfast Casserole 

Only a few ingredients stand in your way of making this antipasto breakfast casserole. You will need the following ingredients:

  • Sliced bread
  • Ham
  • Pepperoni
  • Salami
  • Pepperoncini
  • Olives 
  • Eggs
  • Oregano
  • Whole milk
  • Shredded mozzarella cheese

How to Antipasto Breakfast Casserole 

Making breakfast or brunch at home is a great way to save money. This casserole is also a great way to feed a crowd quickly and is easy to prep ahead. With only a few simple steps, you will be able to devour this antipasto breakfast casserole without having to wait for a seat.

  1. Preheat your oven to 350 degrees. Spray a 9X13 baking dish with non-stick cooking spray. Take bread slices and place them into the bottom of the baking dish. You will need to cut a few slices to make them fit in an even layer. 
  2. Next, take the ham, pepperoni, salami and layer them on top of the bread slices. Add the pepperoncini and olives on top of the deli meat. 
  3. In a medium bowl whisk together the milk, eggs, oregano, salt and pepper. Pour the egg mixture over the antipasto. You can either cover the baking dish with foil and place in the fridge overnight and bake the next morning. If you do this, wait until the next morning to add the mozzarella. OR! Sprinkle the top with mozzarella and place the baking dish in the oven and bake for about 40 to 45 minutes or until the egg has set and golden brown.

Variations for Antipasto Breakfast Casserole 

Vegetarian: Omit the salami or prosciutto and add more vegetables like cherry tomatoes, spinach, or roasted bell peppers.

Mediterranean: Include feta cheese, diced cucumber, and a drizzle of tzatziki sauce.

Spicy Kick: Add diced jalapeños or red pepper flakes

Herb Infusion: Mix in fresh herbs such as thyme, rosemary, or oregano.

Smoked Salmon Deluxe: Replace cured meats with smoked salmon and add capers and red onion

Proper Storing 

Prep ahead: This casserole can be made 24 hours in advance. Make the casserole up until the egg mixture part (leaving the mozzarella until you are ready to bake the day of). Cover with foil and bake the following day. 

Refrigeration: After baking and serving, any leftovers should be refrigerated promptly. Allow the casserole to cool to room temperature before placing it in the refrigerator. Consume refrigerated leftovers within 3-4 days to ensure quality

Freezing: Label the container with the date and use within 1-2 months for the best quality.

Thawing: Best to unthaw overnight in the refrigerator before reheating in the oven or microwave.

Ingredients

  • 5 to 6 Slices Favorite bread
  • 1/4 lb Sliced ham
  • 1/4 lb Sliced pepperoni
  • 1/4 lb Sliced salami
  • 1/2 cup Chopped peperoncini
  • 1/2 cup Chopped favorite olives
  • 10 large Eggs
  • 1 1/2 cups Milk
  • 2 tsp Dried oregano
  • 2 cups Shredded mozzarella
  • Kosher salt and pepper to taste
