foodie fridays: cucumber-berry smoothie
The world keeps getting busier.
Things are more hectic. More demanding. More time-consuming.
People don’t have the time to workout so they wear Shape-Ups.

Today I thought we would switch speeds and give you a recipe that you can make in less than five minutes in a blender that you already have on the counter. You know, the one that you make margaritas out of on the weekends? Yeah, that one. Or if you don’t have a blender and are on the Magic Bullet bandwagon, that will work too.
Today let’s make a smoothie. Yes, I realize a smoothie is not currently “trending” like juicing, but this recipe won’t break the bank or skip on the flavor. This smoothie recipe has simple, delicious and heart-healthy ingredients- frozen berries, honey, milk, cucumbers. You can have it for breakfast, a snack or heck, even dessert!
Which is why I recommend putting this smoothie in milkshake glasses. I won’t tell if you don’t! Just put all the ingredients in the blender and blend away. What you get is a healthy, flavorful treat in less than a minute.
This is one smoothie you’ll definitely won’t be too busy to make.
Cucumber-Berry Smoothie (adapted from Vegetarian Times)
Prep Time: 5 minutes
Cook Time: 2 minutes
1 1/2 cups frozen berries
1 cup cold skim milk
half an English (hot house) cucumber, de-seeded and chopped into large chunks
1 to 2 tablespoons honey
Squeeze of lemon
Combine all ingredients in a blender and blend. Add more skim milk as necessary, depending on desired consistency.
