Hello, August!

I’m not quite sure how I feel about entering into the eighth month of 2016. Didn’t we just start this year? Am I the only that feels like time has flown by? GEEESH.

Even though 2017 will be here in a hot second, there is good news. Well, maybe just “nerdy”good news in my opinion, but with back-to-school coming down the pike stores are stocking up on school supplies! YAY!!!! Oh, come on! You know you get a little excited when Lisa Frank folders, sharp pencils, and three-ring notebook pads are within your reach. And don’t forget about those neon colored sticky notes!

With back-to-school supplies practically begging me to take them home as I stroll through the Target aisles. I’m thinking this week is a good time to get organized. What else is a girl supposed to do in this effing heatwave that will never end? Sigh. But I am curious, what are you go-to items when you need to refresh your organizational system? New calendar? Notebook? Pencils? Red stapler?

For me, it’s all the above. I love a newly sharpened pencil, a colorful to-do list notepad, and miniature sticky notes. I am a sucker for anything minute when it comes office supplies or food props. Oh, goodness. And speaking of food, I almost forgot!

Something that you need to add to your to-do list this week is to make this Grilled Stone Fruit Acai Bowl. Actually, acai bowls should become part of your weekly morning routine because they are so simple, healthy, and delicious. Right now stone fruit is front and center. I went for the full mixture of plum, nectarines, peaches, and apricots. Because you can never have to much fruit. Am I right?

Anyway, make the smoothie in a blender or food processor. Grill the stone fruit slices and add whatever additional toppings you are jonesing for. This acai bowl may not slow down time, but it will certainly make you forget about the heat.

Grilled Stone Fruit Acai Bowl

Ingredients:

2 acai Superfruit Packs
1 banana
1/3 cup skim milk
1 tablespoon chia seeds
Plum, sliced
Nectarine, sliced
Peach, sliced
Apricot, sliced
Granola, garnish
Honey, garnish

Directions:

Preheat a grill to medium-high heat. Grill the plum, nectarine, apricot, and peach slices about three to four minutes on each side or until grill marks appear. Remove grilled fruit and set on a plate.
Place superfruit packs, banana, milk, and chia seeds into a blender. Blend until smooth. Pour acai mixture into one bowl or two. Topped with grilled fruit and other garnishes. Enjoy!
