Easy like Sunday morning. 

Oh, how I wish every morning could feel like a breeze. Sadly with a toddler running around those slow, lounging in your pjs until noon days will have to wait. 

Even though I won’t be sleeping in that doesn’t mean I can’t enjoy something scrumptious on any said morning. Which is why I’m a huge advocate for overnight breakfast bakes. This Nut Butter-Banana Stuffed French Toast Bake does not disappoint. 

Simply assemble the day before, let it soak overnight, and bake the next morning. So divine. A slice of heaven if you must.

What’s in this Nut Butter-Banana Stuffed French Toast Bake?

Um, just a few of my favorite things….like: 

Brioche bread

Whipped Cream cheese 

Maple syrup

Bananas

Almond Butter

Vanilla Extract

Whole Milk

Cinnamon

Tips for Making Nut Butter-Banana Stuffed French Toast Bake:

1) Brioche bread. There is nothing better than buttery, brioche bread. The thickness alone makes it the supreme winner when it comes to overnight breakfast bakes. If you can’t find brioche you can certainly use sourdough or Texas Toast. 

2) Nut Butter. Any kind will do! I used almond butter for this recipe, but cashew, sunflower, etc. would be excellent substitutes! 

3) Whipped Cream Cheese. Or heaven in a tub! But seriously, you can either buy whipped cream ready-to-go, or simply whip a block using a hand mixer. 

4) Room temperature. Let the french toast bake come to room temperature before cooking in the oven. This will help ensure that everything cooks evenly.

Can I make this Dairy Free?

You bet! Simply swap out the whole milk for almond milk or oat milk! 

Can I make this Gluten-Free? 

Totally! If you can find gluten-free bread at the store simply swap out the brioche for your favorite kind!

Do I have to let it set for 24 hours?

You don’t! I do recommend letting this dish soak for at least 2 hours before baking. This will give all the mixture a chance to absorb into the bread.

Nut Butter-Banana Stuffed French Toast Bake

Ingredients:

  • 15 to 20 slices brioche bread, halved
  • 1/2 cup whipped cream cheese
  • 1/4 cup almond butter (or any nut butter) + 1 tbsp
  • 3/4 cup maple syrup, divided
  • 4 bananas
  • 4 large eggs
  • 1 3/4 cups milk
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter

Directions:

  1. Spray a 2 or 2.5 quart baking dish with non-stick cooking spray. Take half of brioche slices in the bottom of the dish. It’s okay if some of the slices overlap.
  2. In a mixing bowl combine whipped cream cheese, 1/4 cup almond butter, 1/4 cup maple syrup until smooth. Take the mixture and pour it over the brioche slices. Making sure to spread evenly.
  3. Take two of the bananas, slice them in half and lay them lengthwise over the filling. Next, take the remaining brioche slices and lay them over the bananas. Again, it’s okay of the slices overlap.
  4. In another large mixing bowl combine the eggs, milk, 1/4 cup of maple syrup, vanilla extract, and cinnamon. Pour the mixture over the brioche slices, cover with foil, and then chill for at least 2 hours or up to 24 hours.
  5. When ready to bake, preheat your oven to 375 degrees. Bake for about 60 minutes or until the center temperature reaches 180 degrees. You will want to cover the dish with foil halfway to make sure it doesn’t burn on top.
  6. Once cooked, remove from oven and allow to stand for about 10 minutes. Meanwhile, slice the remaining two bananas. Preheat a large skillet to to medium heat. Melt the butter and then add 1/4 cup maple syrup, and 1 tbsp almond butter. Stir to combine and cook for about a minute. Next, add in the banana slices and continue to cook for about 2 minutes.
  7. Spoon the mixture over the breakfast bake and enjoy!
