Can I just say, WOW?
I’m still feeling a little overwhelmed as we navigate through these uncharted waters. The universe has presented us with quite an obstacle to overcome.
I’d be lying to you if I didn’t feel some sort of anxiety or fear when I think about the “What If’s.” It’s natural. I wouldn’t be human if I didn’t have some sort of flight or flight mode engaged when our very being is, well, being questioned.
However, given all that I still believe we can take care of ourselves and our loved ones, and it starts in the kitchen. Keeping our bodies nourished with food whether the ingredients are frozen or from the pantry can still happen! We just need to get a little creative.
With that, I am revamping my content a bit over the next few days or weeks. I want to give you content that is helpful. Meaning I want to give you recipes that are applicable with the supplies you have on hand either in your freezer or pantry.
One of those staples in the pantry are canned tomatoes. Ah, the tried and true. Nothing beats canned tomatoes. Preserved at it’s peak (usually August) tomatoes are a wonderful ingredient to incorporate into a lot of dishes. Plus, I always swoon at the red hue.
So, below are a few recipes that I’ve made over the years that use canned tomatoes. I’ve also included with recipes some suggestions for moderation or twist to hopefully get those creative juices flowing.

– Pantry Items Used: onion, green peppers, garlic, carrot, crushed tomatoes, brown sugar, Worcestershire sauce, wine
– Variation: use chicken stock instead of wine, use frozen vegetables, use lentils or kidney beans instead of sausage
– Freeze: can be frozen up to a month.
– Pantry Items Used: ramen noodles, chicken stock, Italian canned tomatoes
–Variation: use frozen vegetables instead of fresh
– Pantry Items Used: frozen tater tots, ground sausage, onion, bell pepper, spices, fire roasted canned tomatoes, egg
– Variation: use frozen vegetables instead of fresh, use beans instead of sausage, use frozen potatoes or hashbrowns instead of tater tots
– Pantry Items Used: onion, garlic, canned whole tomatoes, chicken stock, green olives, frozen fish
– Variation: use frozen shrimp or omit fish completely, use frozen cauliflower, saltines for serving instead of bread

– Variation: use canned chicken instead of frozen or fresh chicken (just watch your salt distribution), instead of wine use chicken stock

– Pantry Items Used: red lentils, onion, garlic, fresh ginger, fire roasted tomatoes, vegetable stock
– Variation: use dry ginger instead of fresh, add frozen vegetables, add frozen shrimp, for less spice add more lemon juice
30-Minute Fire Roasted Chicken Ragu
–Pantry Items Used: onion, garlic, tomato paste, chicken stock, fire roasted tomatoes, pasta, bay leaf
– Variation: omit chicken, instead of heavy cream use more chicken stock, use frozen vegetables
– Pantry Items Used: tortilla chips, tomato sauce, fire roasted tomatoes, quinoa, black beans, onion, garlic, egg
– Variation: use soft tortillas instead of chips, use kidney or pinto beans instead of black, omit the adobo peppers for your own spice mix
Roasted Red Pepper Spiced Farro Parmigiana
– Pantry Items Used: farro, garlic, onion, tomato paste, chicken stock, crushed tomatoes
– Variation: instead of farro use any pasta or rice, omit bell peppers use canned artichokes, omit ham and used canned tuna or chicken (watch the salt intake), use frozen vegetables
– Freeze: can be frozen up to a month.
Mini Sloppy Joe Naan Pizzas
– Pantry Items Used: onion, ground beef, ketchup, yellow mustard, brown sugar, tomato paste, red wine vinegar
