Let’s make a deal?

With the new year in front of us, I want to start fresh and clean. Just like the song, “So, fresh and so clean clean.” But! Here’s the catch: I can’t get on the green-smoothie-raw-veggie-vegan-kale-power-bowl bandwagon. It’s just not me. In fact, if you ever witness me posting a kale smoothie on this blog send help immediately with a bag of tater tots.

Even though I have an enormous amount of respect for those who choose a more raw diet, my approach when it comes to a healthy new year start is about balance. Food should not be bland or sad looking. There is nothing worse than staring at a plate of full of food that looks like dirt paste. It’s almost criminal.

So, here’s the deal. Instead of posting about rabbit food the entire month of January, over the next few weeks I will be sharing recipes that are healthier, but still pack a ton of sass. What do you think? Do we have a deal?

If you said yaaaaaaaaas, then you are going to flip the eff out over these Greek Chicken Tacos with Feta Citrus Slaw. Raise your hand if you like Greek food? I have an embarrassing addiction when it comes to noshing on hummus, Greek salads, tzatziki, spanakopita, and olives. I’m getting hungry just thinking about it!

One of the many reasons I adore using Greek flavors like oregano, garlic, basil, and cinnamon is by adding these few spices to a protein, you don’t have to fry the shit out of it to make it taste delicious. Which is why these tacos need to be in your regular dinner rotation. You can add the chicken to salad, pasta, or on top of rice. But don’t forget the Feta Citrus Slaw. Fresh feta combined with cabbage and lemon juice, it’s like taking a Greek vacation sans the jet leg.

Greek Chicken Tacos with Feta Citrus Slaw

Ingredients:

for the greek tacos:

1 lb chicken stir-fry strips

1 tablespoon Greek or Mediterranean seasoning

2 tablespoons olive oil

flour tortillas, for serving

grape tomatoes, garnish

pico de gallo, garnish

red onion slices, garnish

salt and pepper to taste

for the feta citrus slaw:

2 cups napa cabbage, sliced thinly

1 tablespoon lemon or lime juice

1 tablespoon feta, crumbled

salt and pepper to taste

Directions:

for the greek tacos:

In a large bowl, toss chicken, Greek seasoning, salt, and pepper. Preheat a skillet to medium-high heat. Add the olive oil and sauté chicken until no longer pink; about five to seven minutes. Remove chicken from skillet and set aside. Preheat a skillet to high heat and add a tortilla. Toast the tortilla on both sides until slightly golden about a minute per side. Take a tortilla and add chicken strips. Top with grape tomatoes, red onion slices, and feta citrus slaw. Repeat to process to make remaining tacos! OPA!

for the feta citrus slaw:

In a large bowl, combine cabbage, lemon juice, feta, salt, and pepper. Place in the fridge for at least 30 minutes to allow the flavors to combine before topping the tacos.
