Over the weekend, I put on my big girl panties.

Sometimes a girl just needs to open the dresser drawer, pull out a pair of unmentionables, put one foot in, then the other, and pull ’em up.

I have been contemplating the idea of making yogurt at home. But then I start thinking about the process: milk, saucepans, using a giant thermometer to accurately gauge the temperature, and waiting. Oh, the waiting (have I mentioned that I have the attention span of a three year-old?). After about 5 minutes, my brain hurts and I decide to make nachos instead.

But it wasn’t until I received this beautiful, stunning book, 75 Probiotic Drinks, written by Julia Mueller, author of The Roasted Root, did I finally say, “Ohhhhhh, I can do that.” For those of you who haven’t met Julia, click over to The Roasted Root right NOW! Julia has gorgeous photos and drool-worthy recipes. Plus, she’s a gem!

So, when she asked me to make a recipe out of her new cookbook and review it, I was like, “Heck yes!” This book is full of how-to make probiotic drinks – kombuchi, kefir, ginger beer, etc. But you could imagine my surprise when she shows you how to make your own yogurt, I flipped out. The best part, she makes the whole yogurt making process easy peasy.

If this #yogurtmakingblackthumb girl can do it, so can you! All you do is (almost) boil the milk, let it chillax, remove some of the skin off the top, pour it into a jar, and wait! I decided to make the Mojito version and let me tell you, it feels like a summer oasis in my house right now!

Homemade Mojito Greek Yogurt

Ingredients:

2 cups homemade greek yogurt (**please reference book for complete homemade yogurt process)
10 mint leaves, finely chopped
zest of 1 lime
1 tablespoon lime juice
2 tablespoons agave nectar or (sugar)
1/3 cup coconut milk

Directions:

1. Add the coconut milk, mint leaves, agave, lime juice, and zest to a small saucepan.
2. Heat over medium until it reaches a boil.
3. Reduce heat and simmer for 2 minutes.
4. Remove saucepan from heat and allow the mixture to cool for 10 minutes.
5. Using a small strainer, strain the mint leaves from the mixture and discard them.
6. Refrigerate the mojito mixture untiled chilled. The mixture should be fairly thick.
7. Once cool, combine the yogurt and mojito mixture.
8. Enjoy plain, turn it into frozen yogurt, or use it for the Cantaloupe Cooler in the smoothie section of this book
