Three years ago today, I wrote my first blog post.

And. . . . .it was all sorts of awkward.

I was new to the idea of writing on the “Internets”. In the back of my mind, I thought if you wanted to express thoughts or feelings to someone, anyone, you’d pick up a telephone to say, “I need to talk”, or invite them over for tea and strumpets. I found it odd  that people wanted to bare their souls to complete strangers or share information that could have easily been left to an inner monologue.

I was an Internet virgin.

At that point I wasn’t on Facebook, either for personal or the blog. I viewed cyber space as one giant abyss where information, ideas, thoughts, and feelings are forever lost; mostly, a place where nothing good truly blossoms. Fast forward three years, and I have seen the Internet light.

Writing this blog has changed my life. What started out as a way to keep family and friends informed of our crazy, shenanigans of a life here in the Mile High City, transformed into something I never knew could exist. I learned how to cook (no joke). The thought of browning ground beef sounded daunting five years ago. Also, somewhere between learning about an aioli and ciabatta bread, I threw a frozen piece of swordfish into a hot skillet. Ooops!

Also, I’ve learned about photography. Well, I should say still learning…photography is hard, friends. Check out my first food post back in 2011 and compare it to today. Thanks goodness I’ve continued to hone my craft, otherwise we all might still be hungry.

Last but not least, I’ve learned to accept me, good or bad. This was a hard affirmation to swallow. I remind myself daily that I have to put my best foot forward because I never know what will happen or who it will affect. As my wise mother-in-law says, “you don’t want to subtract points from yourself.”

This blog has been a perfect vehicle to allow me to get to know myself. It allows to me explore depths of my mind and embrace curiosity. When you think about it all for a moment, it’s kind of amazing what a blank, white space can do for the soul.

So, as Climbing Grier Mountain celebrates three years, what better way to celebrate than with a Mexican-Breakfast mash up! Since CGM wouldn’t be the blog it is today without you guys, I thought I would spice it up and make some savory waffles. I took the spice mix I generally add to my tacos and threw them into the batter. The mariachi band instantly started to play.

Next, I whipped up some guacamole and sautéed chicken chorizo patties….it was a fiesta in the making! I threw everything into one sandwich, and voila! Mexican-Breakfast madness fit for blogiversary celebration!

Spiced Mini Waffle Breakfast Sandwiches with Chicken Chorizo & Guacamole

Ingredients:

1 cup of Bob's Red Mill Waffle Mix
2 eggs
2 tablespoons vegetable oil
3/4 cup cold milk
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon paprika
1/2 teaspoon garlic powder
1 lb ground chicken chorizo, formed into 1-inch patties (about 10)
Favorite guacamole (about 2 cups)
Sour cream, garnish
Red onion, garnish
Jalapenos, garnish
Cilantro, garnish

Directions:

Preheat a waffle maker. In large bowl, combine first nine ingredients. Using a 1/4 measuring cup, ladle waffle batter into waffle maker. Let it do it's thing. Repeat five times. You want to use two squares of the whole waffle to make a single sandwich.

While you are making the waffles, heat a skillet to medium heat. Add some olive oil to the pan and brown chicken chorizo for about 5 minutes on each side until all patties are cooked. Set aside.

To serve: take one waffle square and top with your favorite guacamole. Top with two chicken chorizo patties and add more guacamole on top. Place another waffle square on top and garnish with toppings!
