We all know our avocado toast game is strong. 

Hasn’t this famous toast been on the breakfast/snack circuit for at least four years? I honestly think avocado toast hit its peak when it became the Christmas ornament of 2017. Would you agree? 

Don’t worry I’m still on the avocado toast bandwagon. But have you ever thought to yourself, is there another toast out there for me? Between the keto, low-carb, plant-based, gluten free craze you would think the options would be endless. 

Well, I’m happy to report that the next “toast” craze actually comes via a starchy, root vegetable known as the sweet potato. I love sweet potatoes. Okay, I should pump the breaks. I love roasted sweet potatoes. For the life of me, I cannot eat mashed sweet potatoes. The texture makes me gag. Is that weird?

So when I heard sweet potato toasts were next up on the breakfast/snack circuit I actually got excited. There’s something about crispy sweet potato edges that make me giddy. Plus, let’s not forget about the toppings. BUT! Before talk about that we need to establish some foundation. 

First, you can make sweet potato toasts in YOUR TOASTER. Kind of blind blowing, yeah? If you cut the slices a 1/4-inch and place them in the toaster plan on pushy that lovely leveler about four to five times. This way the sweet potatoes don’t burn. 

Second, if you don’t want to stand by your toaster all morning, I highly suggest prepping your toasts the night before. Cut them a 1/2-inch thick, roast them for 20 minutes in the oven at 400 degrees and then the next morning toast them once! 

Once you’ve got the sweet potato toasted start your topping engines. I’ve got Sweet Potato Toasts: 3 Ways today: 1) Everything Egg Avocado Toast 2) Hummus with Cucumber Toast and 3) Peanut Butter and Banana Toast!

Sweet Potato Toasts: 3 Ways!

Ingredients:

  • for the sweet potato toasts: 
  • 4 medium sweet potatoes, washed
  • for the everything egg avocado toast:
  • 1 large avocado, pits removed, mashed, divided
  • 2 to 3 hard boiled eggs, sliced, divided
  • Everything bagel seasoning, for garnish
  • for the hummus with cucumber toast:
  • 1 cup plain hummus, divided
  • 12 cucumber slices, divided
  • 1/4 cup feta crumbles, divided
  • for the peanut butter and banana toast:
  • 1 cup peanut butter, divided
  • 12 banana slices, divided
  • 1/4 unsweetened coconut flakes, divided
  • 1/4 cup granola, divided

Directions:

  1. for the sweet potato toasts: 
  2. Preheat your oven to 400 degrees and line a baking sheet with foil. Spray the foil with non-stick cooking spray and set aside.
  3. Next, slice the ends of each sweet potato off. Take the sweet potato and cut it lengthwise into about 1/2 inch slice. Try to get about three slices per sweet potato.
  4. Place the toasts on a baking sheet and cook for about 20 minutes or until fork tender. Serve with your desired toppings. You may also store leftover sweet potato slices in a container in the fridge. Simply pop the sweet potato slices in the toaster to warm. These are great for meal prepping.
  5. for the everything egg avocado toast:
  6. Divide the mashed avocado among the four sweet potato toasts. Top each toast with three egg slices and garnish with everything bagel seasoning.
  7. for the hummus with cucumber toast:
  8. Place 1/4 cup of hummus on four sweet potato toasts. Place three slices of cucumber on each toast followed by 1 tbsp feta crumbles.
  9. for the peanut butter and banana toast:
  10. Place 1/4 cup of peanut butter on four sweet potato toasts. Place three slices of banana on each toast followed by 1 tbsp unsweetened coconut flakes and 1 tbsp granola.
