Every year I look forward to pear season so I can make Ginger Pear Oatmeal Cookie Crisp, Sauteed Pears with Bacon & Blue Cheese, Sparkling Pear Cider, and this Cardamom Pear Galette

A galette is a rustic, free-form tart made with a single crust of pastry. It’s a quick dessert to make on the weeknight or when you have an impromptu gathering.

You can fill the center of a galette with whatever fruit or protein you want (strawberries, artichokes, ground beef), but I especially love this pear galette. The pears are sweet, juicy, and a beautiful green-hued color. 

I recommend serving the galette with vanilla ice cream or my favorite thing, whipped cream for the ultimate pear dessert.

Galette Crust

Galette crust is either made from scratch using a food processor or for this recipe we are using store-bought pie crust dough. It’s a simple step that will save you time and make this cardamom pear galette appear fast on the dessert table! 

Cardamom Pear Filling

Make sure you use GOOD pears. You want the sliced pears to be ripe, but not overripe. If they are mushy or too soft, don’t use them. Instead, add them to a sandwich or salad! 

  • Pear slices – Use in any kind of pears from the pantry just make sure they are room temperature for even cooking
  • Granulated sugar – pears already have a natural sweetness, but the granulated sugar gives the pears an extra subtle sweetness
  • Ground Cardamom – it’s a complex spice with a piney, fruity flavor. Used in to balance the sweetness of the pears
  • All-purpose flour – help bind all the ingredients together
  • Lemon juice – balances the sweetness out and adds subtle flavor
  • Store-bought pie crust – a quick way to save time when making baked desserts
  • Egg – adds a luxurious layering to the crust while its bakes
  • Whipping cream – fantastic garnish to add to any dessert

How to Make a Cardamom Pear Galette

  • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  • Place the pie crust on a baking sheet. Using a rolling pin, roll dough into a 12-inch circle.
  • In a large mixing bowl, gently toss together the pear, granulated sugar, cardamom, all-purpose flour, lemon juice, and kosher salt. Spoon the pear mixture onto the prepared pie crust and push the mixture to the edges of the dough, but leave a one-inch border. Take the border of the dough and fold dough over the pears making your way around; overlapping as needed.
  • In a small bowl, whisk the egg. Brush the top of the border with egg mixture and sprinkle with more granulated sugar.
  • Bake galette for about 30 to 35 minutes or until golden brown. Cool on a wire rack for 5-10 minutes before slicing and garnishing with whipped cream.

How to Store a Galette

  • The galette is best the day it’s made, but if you have leftovers, you can cover it with plastic wrap and store on the counter for up to 2 days if you are using fruit only. 
  • If you are making a galette that has a savory filling containing a protein, you will need to store it in an airtight container in the fridge for up to 2 days.

Frequently Asked Questions:

  • What is a good substitute for ground cardamom? If you can’t find ground cardamom at the grocery store, you can use ground cinnamon. Or to really make this a great recipe you could blend equal parts nutmeg and cinnamon. 
  • Can I use homemade pie dough? Yes! If you want to make your own pie crust for this recipe please do. 
  • What toppings would you recommend for the cardamom pear galette? Besides whipped cream, I would use ice cream or even maple syrup! 
  • Can I use puff pastry instead of pie crust? I wouldn’t only because you need the cooking time to bake and soften the pears. I would be afraid the puff pastry would cook too quickly and burn.
